DESCRIPTION:The nose on this dry brew made with Hitogokuchi rice is a collection of caramel, cocoa, steamed rice and hint of citrus aromas. Round, fat and dry - not great for a person but stellar for a Junmai. Look for neutral ricey and savory flavors and a vein of butter toffee in the deep and velvety flow. This is one of those solid "feel good" sakes that sits very well in the palate and has a quick finish for such a mouthful. Chewy, buttery, deep and easy. A smaller vessel brings out more of an acidity play providing more body and by all means try this sake at several temperatures. For the professionals - it ages very well in the bottle. | |
