First up is the Syou Jyou "Cardinal Legend", think bold nose filled with blueberries in cream, melon, sunflower and pear tones. Talk about a fast finish! With a lazer-like departure this "legend" has solid apricot, honeydew, and cherry attributes in a clean and thin fluid. A very comfortable sake that speaks to those who like the flavor upfront and an extremely quite finish. Round, even and dry the balance becomes far more evident in the second glass. A mid-sized glass pulls more fruit especially as the fluid warms in the vessel. For the professionals - note that the Yamadanishiki was milled to 37.5%

Next is the Tsukasabotan, it's a very easy to understand Ginjo that borders on beautiful complexity. "Yanagi" is a very light and fruity, filled with incredible flavors like dry pear, cucumber, and hides a deep sweetness that is so subtle it is more of an expression than a flavor. Close your eyes and you will pull hints of vanilla in this graceful and classy sake.
