Some sakes just simply walk the walk, and this Ginjo is no exception. The best part about this brew is that the overall drinking experience is very neutral and clean, but that is surprising because there are so many things going on. Light, snappy, like-water, compact, with a fast finish all play home to hidden flavors from dried cherries to caramel. Not too fruity and not too dry it is position very well in the balanced middle with gentle rice tones and a hint of sweetness. A roundness comes out at or near room temperature, but a slight chill keeps the flavors forward.
