Ozeki Jyudan Jikomi
A few years ago I traveled to my first sake show in San Diego, CA where I tasted over 50 brews of sake--one of the standouts was this gem--both for its sweetness and its pure AWESOMENESS! Not too sweet though...almost perfect...even the bottle was awesome. "It has a rich fruity bouquet, delicate flavor and a velvety texture that glides on the palate" so says the brewer--and I agree. All types of berries paired with vanilla ice cream topped with a hint of whip cream. Brewed by fermenting at a lower temperature, and adding steamed rice and rice koji with great care and attention to the main fermentation mash in ten stages (judan) of brewing, which takes twice as long as the standard types of sake--or, what I like to refer to as "old-school". The brewer claims this is an aperitif or desert wine--I say heck, it's the MAIN COURSE!
