Sake labels have meaning, and this simple, elegant gold crane graces the label for a reason. The Yamagata Honten is located in the Yamaguchi prefecture, where the official bird is the hooded crane. Legend has it that these majestic birds return to nest on the pristine land that surrounds the prefecture. The brewery is committed to the preservation of the ecology that is home to both the cranes and the resources that produce this brew. Kaori Tsuru has floral notes of Japanese neroli [citrus blossom] and honeysuckle followed by white peach and citrus zest. Though this sake is highly aromatic, the flavor is refined with a hint of flint. Well-balanced acidity leads to a crisp and clean finish.
