Yamada Nishiki rice is a larger grain with a soft opaque center and presents a rich and complex flavor with a fantastic umami finish. It is carefully polished using Ozeki’s traditional techniques honed over hundreds of years, which preserves the mellow flavor and mild aroma of the rice.
